1:  Why do some pickled onions float in the vinegar and others don't?

As long as you have a good quality Vintage Cheddar cheese and some fresh bread, pickled onions from the bottom or top of the jar taste just fine. There must be a scientific reason why some float, its a bit like turds......mind you I never tried one of them in a cheese sandwich.......

Pickled onions. Shalots are the only things worth pickling. I've grown 5 varieties this year, waiting for thenn to nnature before deciding to which is best. Floaters, the jars are too full for any to float..

That's a great post. We've got a jar of pickled onions in the fridge. Been there for yonks. Always see them lurking there at the back, then just ignore them. God knows why theyr'e there, neither of us will go within a million miles of the things. So, to answer part two, obviously I do care, cos I've just gone downstairs to see what they're all about. To answer part one, jar is full so they're all crammed in together, so can't say whether some are floating or not.
And the expiry date was February 2009. But instead of throwing them out, I've put them back. Why??
